Deine Großmutter liebte schon die Eigenschaften von Gusskochwaren. Der Grapen, wie er auch genannt wurde, ist ein dreibeiniger Topf, in der Regel aus Gusseisen, der mit seinen drei Füßen am Boden in offenes Feuer oder auf den Grill gestellt werden kann.
Diese Topfform mit dem Dreifuß benutzen früher bereits die Chinesen und die Griechen.
Die Holländer waren im 16. Jahrhundert mit der Gusseisenproduktion weit fortgeschritten. Der gusseiserne Kochtopf war bereits ein Exportschlager.
Deutsche und Niederländer waren die Auswanderer, die den „Dutch“ in alle Welt exportierten, wie in die Vereinigten Staaten und Südafrika sowie Australien.
Außerdem kopierte im 18. Jahrhunderts der Engländer Darby das Verfahren der Holländer und sandte die Produktion seiner gusseisernen Töpfe zu den Britischen Inseln sowie den amerikanischen Kolonien.
Die amerikanischen Siedler nahmen den Topf als einen der der wichtigsten Utensilien von der Ostküste in ihre neue Heimat nach Westen.

Wärmeleitung – genau richtig zum Schmoren
Mit dem hochgezogenen Rand hat der Topf einen fest schließenden Deckel. Dadurch kannst Du ihn ins Feuer stellen und Kohle oben auflegen. Die Hitze verteilt sich optimal im Inneren. Kleinere Varianten sind optimal für Beilagen oder kleine Poritionen.
Speicherung der Wärme bei anderen Materialien
Es gibt Varianten aus Aluminium, Edelstahl und Ton, die sich ebenfalls hervorragend für Schmorgerichte und Eintöpfe eignen.
Vielfältige Verwendung – In- und Outdoor
Du kannst den Topf mit und ohne Füße in den Backofen stellen oder Du hängst ihn an den Schwenkgrill. Auf dem Gasgrill kannst Du die Temperatur genau einstellen, legst keine Kohle nach und musst nicht vorheizen. Die Varianten ohne Füße haben meist ein extra Untergestell.
Der Dutch-Oven am gemütlichen Lagerfeuer ist ideal im Campingurlaub. Im Freien bringen die Füße Abstand zur Glut des Feuers. Zum Backen errichtest Du einen Wall aus der Glut und packst etwas oben auf. Neben Holz nutzt Du Grillkohlen oder Briketts. Mehrere Gusstöpfe kannst Du Stapeln mit Glut auf den Deckeln.
In der Küche kannst Du Modelle ohne Standfüße verwenden auf einem Rechaud, Herd und im Ofen sowie auf dem Gasgrill. Die Indoor-Modelle haben einen gewölbten Deckel und keinen Rand am Deckel.
Manche Hersteller liefern die Töpfe eingebrannt aus. Ansonsten musst Du ihn einbrennen. Manchmal kommt der Topf mit einer Schutzschicht für den Transport. Du entfernst sie mit Wasser und Reinigungsmittel vor dem Einbrennen.
Lange Haltbarkeit
Bei allen Materialien ist eine lange Haltbarkeit gewährleistet. Der Oven aus Gusseisen ist unverwüstlich.
